Broccoli and Cranberry Salad

  • 500 grams broccoli florets, fresh, not frozen
  • 50 grams dried cranberries
  • 50 grams red onion
  • 60 grams Cheddar cheese
  • 50 grams sunflower seeds, raw, or 50 grams slivered almonds

Dressing

  • 80 grams extra virgin olive oil
  • 1 level tablespoon honey
  • 2 level tablespoons apple cider vinegar
  • 1 level tablespoon Dijon mustard
  • 1 clove garlic, peeled
  • ¼ level teaspoon fine sea salt

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Toast seeds/almonds
  1. Toast the sunflower seeds or slivered almonds in a medium-hot pan until golden, stirring often and taking care not to burn them - approximately five minutes. (Or even easier, use an airfryer!) Set aside to cool.
  2. Salad dressing
  3. Add all the salad dressing ingredients to the TM mixing bowl.
    Blend for 10 seconds on speed 8.
    Scrape into a small bowl and set aside.
    Don't wash the TM bowl.
  4. Salad
  5. Add the onion to the TM mixing bowl.
    Chop for 5 seconds on speed 6.
    Add the remaining ingredients and chop for 10 seconds on speed 4. Check if the broccoli is chopped to a uniform size. If not, chop for another 3 seconds on speed 4.
    Transfer the salad to a large serving bowl and carefully stir the salad dressing and toasted seeds/almonds through. (I like to do this with freshly washed hands to ensure that the dressing coats all the ingredients.)
    Cover the salad and let it sit for 30 minutes if possible for the flavours to develop.

Tip

This salad is still scrumptious with less onion, and even without onion if you and onion don't get along. You can exchange the sunflower seeds or almonds for any other seeds or nuts that take your fancy.
The salad will keep well in the fridge for 3-4 days - bonus - the flavours will develop even further.
If, by some chance you do have leftovers, toast one side of a slice of sourdough under the griller or in an airfryer, turn it over and spread it with a few spoonfulls of the salad, then bake/grill for 3-5 minutes. Yumbo!
