Brown Rice, Quinoa, & Pumpkin Salad "Solar Springs"

Ingredients

Dressing

  • 20 gram brown sugar
  • 1 juice of 1 lemon
  • 20 gram soy sauce
  • 20 gram vegetable oil
  • 20 gram white vinegar

Salad

  • 350 gram brown rice
  • 50 gram Red Quinoa
  • 200 gram pumpkin or sweet potato, cubed
  • 50 gram currants
  • 50 gram Mixed seeds
  • 50 gram pumpkin seeds
  • 0.5 bunch coriander leaves, fresh, chopped
  • 0.25 bunch shallots, finely chopped

Recipe's preparation

    Salad
  1. Add 900 grams of hot water to TM bowl, add basket with rice and quinoa. Cook for 15 minutes on speed 4, 100 degrees.

  2. Meanwhile, cube pumpkin and place in Varoma dish. Place on top of TM bowl and cook at VAroma temperature, speed 4, for a further 20 minutes, or unitl rice is cooked.

     

    Remove Varoma and rice basket, and set aside to cool.

  3. Dressing
  4. Empty the still warm TM bowl and immediately add all salad dressing ingredients. Insert the butterfly and mix for 20 seconds on speed 2. The residual heat of the TM bowl will help dissolve the sugar.

  5. Mix the salad
  6. Add all salad ingredients in a large bowl and mix.

     

    Add dressing to taste. Start with half the dressing, add more if desired.

Tip

The original recipe was provided by chef Francois of Solar Springs Health Retreat at Bundanoon. I added the quinoa and changed the quantity of 400 grams cooked brown rice to uncooked.

 

You can subsitute the brown sugar and soy sauce for Ketjap Manis, which is quite sweet already.

    Very easy recipe, and it goes a long way. I only made a half batch which still fed 2 adults and a toddler with enough for another meal. I added a carrot and zucchini and steamed for the last 7 minutes with the sweet potato, and I also added some cashew nuts.

    I will definitely be making this again! tmrc_emoticons.)

    Lovely salad  tmrc_emoticons.) unfortunately I didn't have any coriander so I made it without it. Still delicious. Loved the quinoa and brown rice combo and dressing. Thinking about adding some feta next time. Love

    This is a nice salad. I halved it, kept the cooking time the same and it made enough for 3 meals fot two as a side salad.

    Made it for dinner tonight. Did not have quinoa, pumpkin seeds or currants. Added sweetcorn, celery, zucchini with the pumpkin. Added chia seeds & sesame seeds when mixing all ingredients together with the dressing. yum
