      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Trim stem end of figs and cut into quarters. Cut finger limes lengthwise and scrape out the jewels.
  2. Place the ginger in the bowl and chop 5 seconds on speed 5.
  3. Weigh in the figs and sugar and add the finger lime jewels.
  4. With MC inserted, cook 15 mins at 100 degrees, speed 2.
  5. Remove MC and place spatter guard (or steamer basket) on the lid. Cook a further 15 minutes at 100 degrees speed 2.
  6. Allow to cool, then serve or transfer into 4 sterilised 250ml jam jars and seal.

Tip

I used brown turkey figs but you can use whatever you have available. Ensure they are not over-ripe or your jam may not set well.

Jam is set when it coats a spoon. It will thicken more on cooling.

Try adding the jam to the base of a small jar and topping with freshly made yoghurt and a sprinkle of granola for a quick and delicious dessert or grab-and-go breakfast.
