Honey Cinnamon Roasted Almonds

Ingredients

3 jar(s)

  • 30 grams Butter
  • 50 grams honey
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon cinnamon, ground
  • 300 grams raw unsalted skin on Almonds, raw
  • 80 grams raw sugar
  • 1/2 teaspoon salt, additional
  • 3 jars 300ml capacity each one

Recipe's preparation

    Firstly HEAT YOUR OVEN TO 170C or 340F
  1. Add the butter, honey, 1/2 teaspoon of salt, vanilla and cinnamon to the TM bowl and melt for 2 mins, Varoma, speed 1.

  2. Add the Almonds, and coat them in the honey mixture for 30 secs, Counter-clockwise operation, speed 1

  3. After heating your oven to 170 degree celcius, line a baking tray with grease proof paper and spread the honey coated nuts out on to the sheet. Roast for 15 mins, mixing and turning the nuts at every 5 min interval.

  4. When the nuts are ready after 15 mins you will notice that the honey was bubbled, and become sticky and stringy like caramel.

  5. Add the raw sugar and the other 1/2 teaspoon of salt into a container and shake to mix.

  6. Add the caramelised almonds and then the lid, shake to coat all the nuts in the sugar/salt mix.

  7. Tip the sugar coated nuts back out onto the tray to cool completely. Once they are completely cold, break them apart from each other and store in air tight jar or container or eat immediately tmrc_emoticons.)

  8. They make excellent presents at Christmas for a drinks and nibbles hamper. The cinnamon really gives a christmas flavour, but you could also add chilli flakes to the sugar coating mix for sweet spicey version.

    fyi allow to cool right down on a tray (after the sugar mix) and they dry/firm up nicely for storage.

    Very Moorish Nuts!

    I have made these three times in the last two weeks (some as gifts as part of a hamper)and everyone raves about them.
    Each time I have made them they have turned out a little different. The last lot I made, I popped in the oven and went out to give something to a neighbour and the oven timer had obviously gone off a while ago. They were very dark but still tasted great!

    I love this recipe and make it often as a gift. I usually half the sugar and use 350g of almonds. And because I can be a little lazy at times, I just leave them in the oven for 15 minutes without turning them. In a sealed jar they last for weeks.

    Yum!!! I just made a double batch for my work colleague Christmas gifts. I used Nuttlex (as one friend is vegan). Followed the recipe and it came out perfectly!!     I substituted maple syrup for honey as others have mentioned and I also used coconut oil instead of butter (same quantities) and otherwise followed recipe. They seem to have worked very well! Yum!!

    Like others, I worried if these would stick together in the jar. Mine are still cooling on trays, but I predict that they should be fine, as the sugar coating at the end provides a “crumb” which I anticipate should prevent major sticking.

    Really delicious and so easy to make. Be careful not to burn the nuts - I like to take mine out around the 10 minute mark. That said some people like the burnt taste!

    Made with maple syrup (as not a honey fan) and added a bit of chilli flakes to the sugar/cinnamon mix. Awesome! šŸ‘šŸ‘šŸ˜‹

    Thank you so much for this fabulous recipe. I made these using Almonds and then made a batch with Macadamia nuts. OMG! I made and gave away as Christmas gifts and my family cursed me as they couldn't stop eating them. Delish!

    Made these the first time (meant to be for christmas presents) but they didn't make it. Made 2 more batched, 1 with cashews as well and they were totally awesome! So good that my 12 year old decided she needed to make some but did 1/2 honey and 1/2 golden syrup. They were great too, more like a toffee coating but still great.
