Mexican Rice

  • 1/2 onion, white, peeled, quartered
  • 1 cloves garlic
  • 140g tomato paste
  • 20 gram olive oil
  • 1 heaped tablespoons stock paste
  • Salt and pepper, - To taste
  • 700 grams water
  • Mexican spices, e.g. cumin, paprika, oregano, chilli
  • 200g long grain white rice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Place onion, garlic and tomato paste in jug - chop for 8 sec/speed 5.



    2. Scrape down with spatula and chop for a further 5 sec/speed 5.



    3. Measure out your rice into steam basket



    4. Add olive oil and all spices (salt, pepper, cumin, paprika and oregano to taste ) and cook for 4 min/100°/speed 1. During cook time, rinse rice in steaming basket



    5. Puree for 8 sec/speed 8.



    6. Add chicken stock and water to the bowl



    Mix, 5 secs, speed 2



    7. Place rinsed rice in steaming basket



    8. Cook for 25 min/Varoma/speed 1.5



    9. Carefully remove lid avoiding steam and stir rice.



    10. Replace lid and cook a further 12-15min/varoma/sp 1.5

Tip

This makes a small bowl of rice, suitable as a side dish, or addition to things like tacos and burritos.

If you'd like to make it more of a main dish, add extra rice and water/stock to the jug, stirring at 5-10 minute intervals, checking that your jug doesn't dry out by lifting the basket.

Frozen veggies such as beans and corn should be added at step 10 and really lift the dish!

    namz: Hi there, I'm sorry to hear of your troubles. I have a TM5 but it shouldn't be too different to the 6.

    If it's too crunchy i would add additional water and time. Stop to stir every five minutes and check the texture each time so you don't overcook. See how you go? Good luck

    I'm not sure what I am doing wrong. I have attempted this recipe so many times, and each time it comes out not cooked. It is dry and crunchy, rather than soft and fluffy!
    I am using a TM6 - does it cook different to the TM31 as I am sure the first time I did it (in a TM31) it was fantastic (which is why I continue to try and use this recipe!).
    The flavours are all there, but I have epic fails each time I try it (which has been about half a dozen times now). Help!
