Polenta Fingers

Ingredients

8 piece(s)

  • 150 g polenta
  • 1 tbsp homemade stock
  • 700 g water
  • 10 g olive oil
  • parsley, handful
  • 2 tbsp Parmesan cheese, grated

Recipe's preparation

  1. Grease and line a lamington tin

  2. Place parmesan cheese and parsley into TM bowl and grate for 10 seconds on speed 8. Set aside

  3. Place water, oil and stock into TM bowl, cook for 12 minutes at 100C on speed 1.

  4. Add polenta to the bowl and cook for 30 mins at 100C on speed 2.

  5. Polenta is cooked when it coats the back of a spoon thickly. It should have the consistency of mashed potato

  6. Stir in the cheese and parsely for 20 seconds on speed 2.

  7. Spoon into a prepared tin. Cover and refrigerate until cold.

  8. Cut the polenta into eight pieces and then grill, brushed with a little oil, or fry in about 2 tbs oil or butter until golden.

  9. Top with tomato sauce (homemade preferably)

    These turned out pretty tasty. I made a few adjustements and will do a few more next time I make them. I have never eaten polenta so had no idea if these were going to be tasty enough for hard to please hubby. I did half parmesan and half tasty cheese and instead of parsley I put rosemary in them. I also didn't have any veg stock (haven't got around to making a batch since we moved house a few weeks ago) so I just used a chicken stock cube. I did them in the oven without brushing oil over the top. They were super tasty, crunchy on the outside and soft and fluffy on the inside.
