The Best Oriental Brown Rice Salad

The Rice

  • 900 g water
  • 1 Cup Medium Grain Brown Rice

The Dressing

  • 2 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 1/4 cup Extra Virgin Olive Oil

The Rest

  • 1/2 red capsicum
  • 1 Cup Unsalted Cashews
  • 1/4 Cup Spring Onions
  • 1/4 cup parsley
  • 1/2 Cup Currants or Chopped Raisins

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. The Rice

    Add 900 mls of Water to Thermo and cook Medium Grain Brown Rice in Simmering Basket on 100C, speed 4 for 30 mins.




    Once rice is cooked, put it in a long container and pop it in the freezer for 10 minutes whilst preparing the rest of your ingredients, if it hasn't entirely cooled after the 10 mins, fold rice and place in freezer for a further 5 mins.



    The Dressing

    Add all dressing ingredients to a small plastic container and shake until combined, approx 30 seconds.


    The Rest

    I usually do this by hand as it comes out neater, though you can do in the Thermo: Chop Capsicum finely (picture for reference), set aside.


    Finely chop Parsley and Spring Onions, set aside.


    If you are using Raisins, chop them into small pieces, if you are using Currants, no need to chop them.


    Once the Rice has totally cooled, add each ingredient (incl. Cashews), one at a time and thoroughly fold through the Rice.


    Once Rice mixture is mixed through pour 1/2 of your Dressing in and fold through the Rice mixture, I usually add a dash more after the first mix through and fold through again.


    VERY IMPORTANT:

    FINISH THIS RECIPE THE DAY BEFORE YOU INTEND TO EAT IT, I CANNOT STRESS THE AMAZING DIFFERENCE IN FLAVOUR FROM THE FIRST DAY TO THE NEXT.

    This is a great recipe, similar to one I've been making for many years.. Mine has sesame oil and a little honey in the dressing. Plus, a couple of tablespoons of sunflower & pepita seeds make it super delicious.

    I tried the salad the day of making it, it was ok. But I tried it the following day and oh was it so much better the flavor!!
    i added sunflower kernels to the salad as my local deli does this to their rice salad. I will be making it myself from now on.

    You cook the rice in the thermomix, which is great, and you have the option to chop the capsicum / parsley / shallots in the thermomix. However, I prefer to chop by hand as the apperance is neater.

    This. Is. Amazing! I used kecap manis instead of straight soy. I added all the dressing ingredients with the capsicum, parsley and spring onion and put on speed 4.5 for around 5 seconds. No need to do separately or chop by hand! Then stirred through the rice with currents and cashews. Yum! Great recipe thanks!!

    Made this to take camping, I used a family size bag of microwave brown rice due to lack of time. I also replaced the raisens with dried cranberries as that's what I had already. It was sensational! Everyone went back for seconds and thirds. Will be making this on the regular!

    Delicious. We whizzed the dressing in the thermo setting 5 for 5 seconds and chopped the veggies on setting 5 for 5 seconds. Definitely make ahead, it tastes AMAZING the next day, and the day after too.

    Delicious. Great that you can make it the day before and it tastes even better when served! I will be experimenting with this one. I didn't cut the veggies by hand. Chopped them altogether in the thermi. Still a lovely colour. Also used cranberries instead of sultanas and cooked quinoa with the rice. Great little pop of colour!

    This is a really tasty and easy salad. I've made it 3 times so far. Have tried it exactly as stated, and also replaced the cashews with toasted pine nuts due to a cashew nut allergy. Both ways work well. Definitely good to make the day before.
