Rice

  • 1500 g water
  • 370 g brown rice

Salad Mix

  • 8 sprigs parsley
  • 1 red capsicum, quartered
  • 4 spring onions, roughly chopped
  • 130 g currants
  • 270 g Cashews

Dressing

  • 80 g olive oil
  • 50 g soy sauce
  • 1 lemon, juiced

Recipe's preparation

    Rice
  1. Add water and simmering basket with rice

  2. 30mins/Varoma/speed 4

  3. Put rice in freezer for 10mins to cool

  4. Salad Mix
  5. Add parsley, capsicum and spring onions to bowl

  6. 4sec/Speed 4

  7. Add currants and cashews

  8. Add mix to cooled rice and stir together

  9. Dressing
  10. Add dressing to bowl

  11. Turbo twice 1 second intervals

  12. Add to rice and stir together

Tip

Best made the day before

Juice your lemon on the lid with m/c on and lemon juice will run through and the lid will catch your pips

    Very tasty! We used Saltanas as that's all I had and left out spring onion as I didn't have any. Used a mix or red and green capsicum

    Delicious! I didn't have all of the ingredients but close enough. I didn't have any lemons. I added pepper, chilli powder, shredded chicken and used mixed nuts instead of cashews. I topped it with a sliced hard boiled egg.
