Zucchini and Bacon Stuffed Mushrooms. LCHF

  • 2 zucchini, chop ends off if you choose
  • 6 slice eye bacon/short cut
  • 2 clove garlic
  • 1 cup of mixed cheese, I use Tasty and parmesan, extra for top to bake

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Zucchini and Bacon Stuffed Mushrooms.
  1. 1. Place Zucchini, bacon and garlic in mixing bowl. Closed lid insert measuring cup into mixing bowl lid and then chop. 5 sec/speed 7.
    2. pre heat oven to 200degrees
    3. grate cheese if needed.
    4. Hand mix all ingredients together.
    5. Place large flat mushrooms on oven proof tray, spoon filling into mushrooms and cover with remaining cheese and bake for 20-30mins or until golden brown.
