Ingredients
Soup
- 1000 grams pumpkin, peeled and cubed
- 60 grams olive oil
- 1 brown onion, peeled and halved
- 2 centimetre fresh ginger, peeled
- 2 garlic cloves
- 1 long red chilli, havled and de-seeded (keep seeds if you like it hot)
- 1/2 level teaspoons ground turmeric
- 1/2 level teaspoons ground cumin
- 400 grams coconut cream
- 1 tablespoons TM veg stock
- 1/2 lime

- Preheat oven to 200c
- Place pumpkin in roasting pan and drizzle with 40g olive oil then bake for 30 minutes
- Place onion, ginger, garlic and chilli in TM bowl and cop 3 sec/speed 7
- Add tumeric, cumin and 20g olive oil and cook 3 min/Varoma/speed 1
- Add roast pumpkin when cooked, coconut cream and TM Veg stock then cook for 8 min/100c/speed 1
- Blend 1 min/speed 9 aking dial up to speed 9 slowly
- Pour into a bowl and add a squeeze of lime juice before serving
Tip
This makes a very thick and filling soup. To serve more simply add enough water to reach just under the 2L mark on the bowl before blending.
