Recipe's preparation
- Preheat oven to 180 degrees.Place vegetables and herbs into bowl.Blitz on speed 7 for 5-10 secs depending on how fine you want your vegetables. Scrape down with spatula.
Add a heaped tablespoon of vegetable stock concentrate and chicken breast.
Blitz on speed 5 for approximately 6-10 seconds until you get a nice minced mixture. It may be slightly wet but that's ok. The colour of mixture will depend on what veggies are used. Place "blobs", if a wetter mix, or balls, if a firmer mix, of the mixture on two trays lined with baking paper. Cook at 180 degrees for approximately 20 minutes depending on size. Serve hot or let them cool down and freeze for another day.

I always try and have some of these in the freezer for a quick healthy dinner for the kiddies on the nights I can't be bothered with cooking or for lunches on the weekend. They reheat in the oven in no time. They are also great cold, packed in a lunchbox.
I serve them as is with salad veggies and cubed cheese for the kiddies. You can serve them on pasta with a sauce over the top as well.
I love these because they are egg, gluten, dairy and nut free! So great to take along to playgroup etc. Vary the veggies used to suit your taste.

Delicious! I added breadcrumbs (approx 1 cup) as per previous comments. I didn't have zucchini so substituted with approximately the same quantity of red and yellow capsicum, it gave it a lovely colour and still tastes delicious! Also added a bit of salt, pepper and ground coriander. These are yum and I think you could do so many different variations

Nice & tasty! Scooped out with an icecream scoop so cooked a few minutes extra. Looked quite green because of the spinach so we have re-named them frogs brains after lots of other fun suggestions. Good sign was that one then went to school the next day in the lunchbox for a snack too

I use a melonballer to scoop up the mix and blob/splat them on the tray! No messy hands and they are all the same size.

I added a dsp Moroccan spice, chia seeds kale and used Beetroot leaves instead of spinach. Was a bit wet so I put into a 6 inch sieve to drain, which also gave the option to remove gristle
2nd go with other breast! Added 1.5 cups breadcrumbs after draining the mix in sieve, plus 1 cup grated cheese. Finally got the approval of the handsome one. BTW used red beet tops which added a rosy glow!

We make this every week
This recipe is delicious and very handy for our 2yo with multiple food allergies. We omit the onion and spinach and make sure the meat is free of skin and tendon (which avoids stringy bits). I think of them more as chicken blobs than meatballs but I'm stoked they're free of wheat or egg which would possibly be used to hold a better shape.
When cooking I wait until the liquid runs clear on the baking paper. I pull them out, cool them and freeze them in 4s in cling wrap. When we're stuck for an allergy free snack we grab them. Great to take on a picnic, to the grandparents house, on a road trip, in the car during pick up.
