Dinosaur Burgers (can be gluten/dairy/egg free)

Ingredients

Burger Mix

  • 1 garlic clove
  • 1/2 onion
  • 150 grams Silverbeet Greens (no stalks)
  • 2 Eggs or equivalent egg replacement, I use 90ml of flax gel in place of the eggs
  • 500 grams Minced Chicken or Turkey
  • 60 grams fresh bread crumbs, I use gluten/dairy/egg free bread and crumb it myself in the Thermomix.
  • 100 grams flour, I use rice flour, though you could use regular plain wheat flour.

Recipe's preparation

  1. Wash silverbeet and remove the stalk.  Add to the bowl with the onion and garlic.  Chop 5 seconds speed 7.  You want the mix to be very finely chopped so the silverbeet is hidden, but gives the burgers an amazing green hue.

     

  2. Add eggs, chicken mince, breadcrumbs and flour.  Mix  for 1 minute, speed 5 until everything is well combined and you have a pasty looking mixture.  If the mix is too loose add a little extra flour and mix again until the flour has combined evenly with the mix.

     

  3. Take tablespoons full of the mix and drop them onto a hot skillet or frying pan.  Cook for a couple of minutes on each side until cooked through.  I use a falafel scoop to make lovely evenly round burgers. 

     

    My son can't get enough of these - in fact he will hover around the kitchen until they are cool enough to gobble up.  Calling these little beauties Dinosaur Burgers probably helps with that as much as the delicious taste.

Tip

These little burgers are fantastic for those with gluten, dairy and egg free diets.  They're perfect for lunch, dinner and snack time and with the addition of a little salt and pepper to the mix also make a great grown up treat.

 

To make the flax gel I have mentioned simply boil up 1/4 cup of golden flax seeds in two cups of water for 15 minutes, stirring regularly to help release the gel from the seeds.  When the water looks like gel remove it from the heat and strain.  The gel is easier to measure using a syringe.
