Vegetable Pakora & Pakora Sauce

Vegetable Pakora

  • 450 g potatoes, Peeled
  • --- Half an onion
  • 250 g Chickpea Flour, (AKA Gram Flour)
  • 1 teaspoon salt
  • 1 heaped teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon chilli powder
  • 180 g water
  • 1 heaped teaspoon corriander, Fresh or dried
  • Oil for frying
  • 1 heaped tablespoon natural yoghurt
  • 30 g Tomato ketchup

Pakora Sauce

  • 250 g natural yoghurt
  • 100 g Tomato ketchup
  • 25 g Mint Sauce
  • 1/2 teaspoon chilli powder, (adjust to your preference)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Pakora
  1. Put peeled potatoes and the half onion into bowl and chop for 7-8 secs speed 3.

    Add the chickpea flour, salt, garam masala, cumin and chilli powder to the bowl.

    Mix 30 sec sp 2-3. You may need to use the spatula through the hole in the lid to help it along.

    Give it a good mix in the bowl and add tomato sauce and yoghurt.

    Mix 15 sec sp 2-3.

    Add water and stir with spatula before mixing for 20-30 secs on reverse sp 2.



    Heat oil in pan on stove. I used a smaller pan and did 2 pakoras at a time as I didn't have much oil.

    Take 1 tsp of your mixture and drop into the hot oil. When the pakora is almost ready it will come unstuck from the bottom of the pan and come to the surface. At this point i like to flip it over (carefully) and give it another few seconds before using a slotted spoon to remove and place onto a plate/into thermoserver. If the pakora doesn't come up itself just gently try to slide the spoon underneath and if it's ready it will come with ease.

    Continue with the rest of the mixture.
  2. Pakora sauce



    Add all ingredients to clean bowl and mix 30 sec sp 3.



    Refridgerate until ready to use.

Tip

This makes enough pakora for 4-6 people. I like to double the recipe and have extra in the fridge for the next day.
