CRANBERRY CRACKERS

  • 220 g Milk
  • 50 g brown sugar
  • 50 g Greek yoghurt
  • 75 g plain white flour
  • 75 g wholemeal flour
  • 75 g dried cranberry
  • 1 tsp bicarbonate of soda
  • 75 g rolled oats
  • 25 g sunflower seeds
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/4 tsp salt

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Turn oven on to 180. Grease and line a small loaf tin with baking paper.
  2. Place milk, brown sugar and greek yoghurt in Thermo bowl. 10 sec. speed 3.
  3. Now add plain flour, wholemeal flour, dried cranberry and bi carb soda. Rolled oats, sunflower seeds, turmeric, cinnamon, nutmeg, thyme, rosemary and salt. Mix 10 seconds speed 3. Scrape down sides of bowl. Mix 5 seconds speed 3.
  4. Pour into prepared tin and bake 25 minutes, or until skewer comes out clean. Turn on to cake rack to cool.
  5. wrap in cling wrap and freeze at least 2 hours to firm up before slicing. Can be frozen up to 3 months. When removing from freezer if frozen solid, allow to thaw approximately 20 mintes.
  6. Preheat oven to 120. Slice thinly, around 2mm . Place on lined trays, slices close together. Bake for 50 minutes until they are light brown. Leave biscuits on trays to cool. They will harden so they snap when you break them. Can store in airtight container for 4 weeks.
