Ingredients

Mini Quiches

  • 1/2 cup Tasty or Colby cheese
  • 1/4 cup parmesan cheese
  • 1 Zuchini
  • 2 carrots
  • 6 bacon rashers
  • 2 sprigs parsley
  • 2 sprigs corriander
  • 1 garlic clove
  • 3 spring onions/shallots
  • 1/2 cup milk
  • 1/2 cup thicken cream
  • 1/2 cup S/R flour
  • 4 large eggs

Recipe's preparation

    Mini Quiches
  1. Grease 2 x mini muffin tins


    pre heat oven to 180degrees

  2. Add both cheeses to TM bowl and grate 10sec/speed 9
    set aside

  3. Add vegetables, herbs, garlic & bacon 9sec/speed 7

  4. Add all other ingredients to TM bowl including cheese, 35sec/counter-clockwise operation/speed 4

  5. Pour into mini muffin trays and bake for 30mins
    Remove from oven and allow to cool on a rack or eat warm
    Enjoy.

    Just made these today (using slightly different veggies), and the first batch stuck on the bottom. To fix the problem I cut out a little piece of (thin) bread and put it in the bottom before spooning in the mixture - so much better! Better texture on the bottom, and came out easy as.

    These were really good, I made them with Gluten Free S/R Flour & left out the Cream also baked them in mini Loaf tins so large enough for Hubbies on the go Breakfast.  They did stick a little to the tin as some others have mentioned however well worth the effort.  This on the go Breakfast will be a regular in our home.  Thank you for sharing your recipe tmrc_emoticons.;)

    These mini quiches are nice, but the recipe has too much liquid in, resulting in the muffins sticking to the pan in spite of good spraying. Perhaps the courgettes should be drained after chopping and the milk omitted.

    I added double the amount of flour, which helped a bit.

     We prefer the bacon to be sliced by hand. Will make this recipe again. Thanks for posting

    I'm not sure how but these did not work for me. Stuck to the bottom yet the filling seemed a bit too wet. I have old style muffin tins but I greased them well.

    I made them in a normal silicon muffin tray and added whatever veg I had in the fridge.

    Made them for a team meeting and they went pretty quickly

    Hubby loved them too!! He was a tad disappointed they werent for him.

    Would I be able to freeze these for quick lunches??

    Yum. I put in blind baked puff pastry. Still stuck to Teflon coated muffin pans tho well greased. Only ones they didn't stick to too badly were half sphere shaped pans. Def easy and quick Thanks.

    Very quick and easy.  This was a great way to use up a few leftover vegetables I had - I just substituted the quantities for what I had.  I was worried about them sticking after I read a few other comments so I made them in cases but they still stuck to that - I'll use silicon trays next time.  No one seemed to mind though they were a big success and a hit for lunches.  Thanks for the recipe  tmrc_emoticons.)

    Yummy! Really liked how the ingredients are all really blended, gives a nice taste and texture. Only prob for me was they stuck to the party pan cases i used. Maybe could try without the cases, but I worry they would stick to the muffin tray? Thanks for a nice easy recipe!

    I whipped these up for my daughter's birthday party on the weekend. I made half mini quiche and half in a normal size muffin tray. These were the first things to disappear and everyone asked for the recipe. I've still got people asking me what was in them and how I made them! I only managed to score myself half a muffin sized one and what I got to taste was delish!! Thank you. These will become a regular snack in our house tmrc_emoticons.)

    Yummy, but I found the bacon chopped up so finely through the quiches made them a bit salty.  I think I'd chop the bacon separately next time so the pieces are more chunky.  Love that the vegies are hidden & the kids would never know!

    Hi, I have had this happen to me a couple of times in the past, with no real answer for help! I purchased some brand new muffin tins with the teflon coating and still grease them well, this seemed to do the trick for me.

    Just got these out of the oven and they were sooooo easy and delicious!! Made 24 mini muffins and 12 big ones. Only thing is, they got stuck to my muffin tray, even tho I greased it quite well with butter. Any tips for greasing or do you use silicon muffin holders or anything?
