Moist Apple Cake (Torta di Mele)

Ingredients

20 slice(s)

cake

  • 5 apples (peeled and quartered)
  • juice 1 lemon
  • 50g raw sugar
  • 150g Butter
  • 5 eggs
  • 150g Raw sugar (extra)
  • 1 teaspoon vanilla paste (or extract)
  • 300g plain flour
  • 1 tablespoon baking powder
  • 50g Pine nuts (toasted)

Recipe's preparation

  1. Preheat oven to 170 degrees and line a flan/cake tin with baking paper.

     

    Put the apples, lemon juice and 50g sugar in the TM bowl and chop for 3 secs on speed 5.  Set aside.

  2. Put the butter into the TM bowl and melt for 2 mins at 60 degrees, speed 2.  Add the 150g sugar, the eggs, the flour, vanilla and baking powder and mix on speed 5 for 20 secs.

  3. Add the apple mixture and mix on speed 4 Counter-clockwise operation for 10 secs.

  4. Put the mixture into the tin and sprinkle with toasted pine nuts.  Bake in the oven for 30 mins or until a scewer comes out clean.

  5. Enjoy !!!

    Nice, moist apple cake. Had no idea what size tin i should be using so ended up using one that was too big. Next time would bake in a normal round cake tin, although would need to cook for longer. Also chopped the apple too fine in the TM - would leave more chunky next time. Added a sprinkling of Mixed Spice into the mixture for a bit of extra flavour as well. Might sprinkle flaked almonds on top next time.

    I tried making as muffins first time, however wasn't happy with result as very dense. The second time made in a ring tin and much happier with result. My little boy loved both versions, but he loves just about any cake!

    Very easy and delicious. I sprinkled the top with cinnamon sugar before baking instead of pine nuts  I used a 32 x 22 cm rectangular flan tin and made 6 muffins from the same mixture as the flan tin was quite full. i cooked thses for 20 minutes)
