Sweet Potato & Pumpkin Bread

Ingredients

Dough

  • 220 g sweet potato
  • 100 g pumpkin
  • 40 g Milk
  • 60 g Butter
  • 300 g rolled oats
  • 200 g brown rice
  • 2 sachet instant yeast
  • 150 g warm water, Reserved from cooking potato & pumpkin
  • 1 tsp Nutmeg
  • Pinch salt

Recipe's preparation

    Method
  1. Place rolled oats & ruce into TM and mill for 1 min / speed 9 - set aside
    Place potato & pumpkin into Varoma, add 500g water & 
    cook for 20 mins / Varoma / speed 3
    Make sure the potatoes & pumpkin is soft and break easily with a fork
    Add butter and milk and mash for 10 secs / speed 8
    Add all the remaining ingredients and mix together for 5 secs / speed 7
    Set the dial to closed lid position, knead for 2 mins / interval speed
    Pour into a buttered bread tin, cover & allow to rise for 30-40 mins
    Cook at 190 deg for 20 mins, reduce heat to 150 deg, and cook for a further 20 - 25 mins until the loaf sounds hollow when tapped
    Allow to cool in tin before removing
