Chicken with Tomato, Mushroom and Butter Sauce

Ingredients

  • 500 grams of chicken breast, diced in to bite size pieces
  • 3 garlic cloves, peeled
  • 1 400 gram tin of diced tomatoes
  • 160 grams of sliced mushrooms
  • 100 grams of white wine
  • 40 grams of olive oil
  • 30 grams of diced butter
  • salt to taste
  • 1 handful of fresh basil, sliced
  • shaved parmesan for garnish

Recipe's preparation

  1. Place chicken in the Varoma both top and  bottom making sure you do not block all the holes - set aside

    Add garlic to bowl and chop 5 seconds, speed 6, scrape down bowl

    Add oil cook 3 minutes, 100 degrees, speed one

    Add tomaotoes, mushrooms and white wine  - place Varoma with the chicken on top and cook 15 minutes, Varoma setting, reverse speed one

    Place cooked chicken into thermoserver to keep warm

    Add to the bowl the butter and salt to taste - cook 10 minutes, 100deg, reverse speed one,  MC off

    Stir through basil and pour the sauce over the chicken - let it sit for ten minutes for flavours to meld

    Serve over pasta of your choice  and garnish with shaved parmesan
