Asian Coleslaw with chunky Thai Cashew Dressing

Ingredients

4 portion(s)

Coleslaw

  • 1/4 red cabbage, roughly chopped
  • 1/2 red onion, roughly chopped
  • 1 carrot, roughly chopped
  • 3 kale leaves
  • Handful of Baby Spinach leaves

Dressing

  • 40 gram raw cashews
  • 15 grams Coconut sugar or rapadura sugar
  • 1 clove garlic
  • 10 grams fish oil
  • Handful of Corriander leaves
  • 1 Juice of 1-2 limes, depending on tastes

Recipe's preparation

    Coleslaw
  1. 1. Place all ingredients except the spinach in the tmx bowl.  May be best to place the carrot on the bottom so it can be chopped thoroughly.  Chop 4-6 seconds, speed 5.  If you would like it courser chop for less, if you prefer it finer chop a little more, but watch that it doesn't become juice.

    2. Lay out spinach and top with coleslaw


  2. Dressing
  3. 1. Place all ingredients except lime juice in thermomix and chop for 4 seconds, speed 6. If you would like it finer chop for longer.

    2. Add lime juice and blend for 5 seconds, speed 3.

    Pour over salad and serve with crushed cashews and corriander

    A nice salad, we enjoyed the change from traditional coleslaw. I wanted more dressing but that was my own fault as I used a lot more cabbage. I also added an apple. I used fish sauce as I’ve never heard of fish oil. Perhaps a drop of sesame oil would be good too

    Tasty. Next time I’ll make the dressing more dressing-y. Hubby and I enjoyed. 5 and 2 not so much...(too tangy mummy)...oh well, more for us!

    Are you supposed to put the cashews and coriander in step 1 of the dressing? The third step makes it sound like you don't. Anyway, I did put the cashews in at dressing step 1, left out the coriander (didn't have any), and used savoy cabbage instead of kale & baby spinach in the salad. Pretty good! Next time I would use 20g fish sauce and 2 limes instead of 1.
