barley rissotto with marinated feta (yotam ottolenghi recipe)

Ingredients

risotto

  • 200g pearl barley
  • 30g Butter
  • 40g olive oil
  • 2 celery stalks
  • 2 shallots, i used brown onion
  • 4 cloves garlic
  • 4 thyme sprigs
  • 1/2tsp smoked paprika
  • 1 bayleaf
  • 4 strips lemon zest
  • 1/4tsp chilli flakes, optional
  • 1 can chopped tomatos
  • 300ml water
  • 1-2tbs Veg Stock Paste
  • 300g Passata
  • basil or oregano to sprinkle on top

marinated fetta

  • 300g feta roughly broken up
  • 50ml olive oil
  • 1tbs carraway seeds, toast in dry fry pan or in thermomix

Recipe's preparation

    risotto
  1. chop celery/shallots/garlic 2 secs speed 5 scrape down add olive oil and  butter and cook 120/ 5mins-rev-speed 1 

    add rest ingredients and cook for 10mins-varoma-rev-speed 2

    now set for 50mins/100/rev/speed 2 again with basket inplace of mc turn off machine andcheck everynow and again.

    serve with marinated feta and sprinkle oregano or basil

to prepare feta just mix all ingrediants together,its a great filling lunch or dinner for kids

    1 no need to soak barley

    2 you can substitute whatever you like eg passata although the jar is 300grams needed for recipe tmrc_emoticons.;)

    3 always saute on highest heat you get better result

    4 mils and grams are same when cooking with thermomix

    5 i did recommend using the basket instead of mc but always turn off your machine when checking contents as you would not want to risk injury

    6 you can marinde fetta as long as you wish

  • This recipe caught my eye

    This recipe caught my eye despite there being no previous comments. I decided to give it a go and tried to follow the recipe as best I could.

    There are a few steps that had be scratching my head but I persevered. Such as:

    - Should the barley be soaked overnight or not? I chose to soak mine.

    - Can passata be substituted for a second tin of diced tomato? I chose to replace passata.

    - In the step where butter and oil is added, it says to cook but no temperature is given. I gave it some heat halfway through this step to sautee the ingredients a bit.

    - The measurement for water is in mL not grams, not the most convenient measurement for Thermomix cooks.

    - On the final step (long cook) it's not clear if you recommend the basket or the MC. I used the basket. You also recommend checking every now and then, which may be dangerous as the liquid is quite lively and requires the basket to keep it from splashing out of the bowl. I chose to not check mine.

    - It doesn't state how long to marinate the feta in this recipe. My two-week home marinated stuff worked well, as would a store bought marinated feta.

    - Spelling errors eg. for words such as 'celery', 'varoma', and 'ingredients' and some missing spaces between words

     

    Having said that, I was very happy with the result. Some final seasoning, homegrown basil, freshly grated parmesan and generous helping of home marinated feta finished the dish well and I happily prepared leftovers to enjoy tomorrow. Thank you for posting this recipe. I have rated three stars for now but will reconsider that if the recipe is improved and if I cook it again with the same good results  tmrc_emoticons.;)
