creamy butter bean pasta

butterbean sauce

  • 1 can butter beans, drained and rinsed
  • 1 lemon, using the juice
  • 1 brown onion, cut into halves
  • 3 cloves garlic
  • 2 tablespoon plain flour
  • 500mls Milk
  • 1/4 cup strength 5 parmy cheese, grated
  • 1/4cup basil, chopped
  • 1/4cup Parsely, chopped
  • 20g olive oil

pasta

  • 320gms fettucine or papadelle pasta
  • 1200g water
  • 1 pinch of salt

steamed veggies

  • 200g Swiss Brown Mushrooms, sliced
  • 1/4cup Frozen baby peas
  • good handful of baby spinach, roughly chopped
  • 1 zucchini, sliced diagonally
  • 1 lemon, cheeks to serve
  • salt and pepper to taste
  • 1/4cup pine nuts, toasted

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    cook pasta and steam veggies
  1.  Grate cheese, 10sec, sp10. Set aside, rinse and dry bowl

    Roughly chop spinach, 3sec, sp5, set aside.

    Chop basil and parsely, 3sec, sp6. Set aside.

     

    Cook pasta as in BCB. Once cooked, drain in varoma dish, set aside in server. 

  2. Pplace veggies in varoma dish, season with salt and pepper. Add 1 ltr of water into bowl, steam veggies for 10mins, varoma, sp1. 

  3. Once veggies cooked combine chopped spinach in the varoma dish using spatula. Place in server with pasta.

  5. Add onion and garlic. Chop 3sec sp7. Scrape down sides

  6. Add oil, cook for 3 mins, 100deg, sp1

  7. Add butter beans, cook for 1min, 100deg, sp1

  8. Add milk, cheese, lemon juice from one lemon (squeeze through mixing bowl lid) flour. Blend for 1min, sp7

  9. Add basil and parsely, cook for 10mins, 100deg, sp1, mc off

    Sauce should thicken slightly. 

  10. Pour sauce over veggies and pasta, using spatula to gently scoop under to pasta to combine eveything. Sprinkle pinenuts over and serve with lemon cheeks. Serve immediately

Tip

The sauce will only thicken slightly, if you make the sauce too thick in the bowl before pouring over pasta, the beans can cause the dish to taste a bit dry. Be sure to serve and eat straight away. 

You could add whatever veggies you like- if its green, it will go nicely with this dish!

    This was a nice vege pasta dish, steamed mushrooms worked well. I was surprised when the butter beans were blended into the sauce, bit different. I added extra veges and more lemon juice and used fresh lasagne. Altogether a good dish.
