Stuffed Squash

Ingredients

Stuffed Squash

  • 1 --- large squash, cut in half, scrap middle out and keep the outer edge as a shell for stuffing
  • 40 g parmesan cheese cubed
  • 1 clove garlic
  • 1 --- red chilli
  • 130 g cauliflower pieces
  • 20 g extra virgin olive oil
  • 6 leaves spinach, roughly chopped
  • 2 sprigs Thyme, leaves removed
  • 40 g pinenuts

Recipe's preparation

  1. Grate parmesan speed 9 / 4seconds. Set aside

  2. Chop garlic and chilli speed 8 / 3 seconds.

    Scrap down the edges

  3. Add inner squash bits, cauliflower, thyme, Extra Virgin Olive Oil and spinach. Chop speed 5 / 5 seconds

  4. Add parmesan and pinenuts to the bowl. Mix on reverse / speed 4 / 10 seconds. Season to taste with salt and pepper.

  5. Stuff squash 'shells' with stuffing mixture, filling as much as possible. Gently place in the base of the varoma.

  6. Rinse bowl. After rinsing add 1 litre of water to the bowl.

  7. Setting the varoma in place on the Thermomix steam the squash Varoma / 20minutes. Test to see if the outer shell has just softened.

     

  8. Serve with a drizzle of Extra Virgin Olive Oil and a sprig of thyme.

Tip

You can easily make this dish vegan or dairy free by removing the parmesan.

 

Alternate squash for zuchinni or pumpkin if prefered.

    Quite an unusual taste, although wouldn't make it again as my family didn't enjoy it.
