Ingredients

6 portion(s)

Chicken & Veg Pasta bake

  • 4 sprigs Flat leaf Parsley, fresh, Leaves only
  • 2 sprigs Basil, fresh, Leaves only
  • 3 sprigs Oregano, fresh, Leaves only
  • 2 carrots, Roughly chopped
  • 1/2 Zuchini, Large,or 1 small, roughly chopped
  • 1/2 green capsicum, Roughly chopped
  • 2 stalks Celery, Roughly chopped
  • 200 g butternut pumpkin, Roughly chopped
  • 200 g Tasty cheese, Cut into chunks
  • 600 g chicken breasts, Cut into chunks
  • 1 brown onion, Quartered
  • 1 red or green chilli, Roughly chopped
  • 2 cloves garlic
  • 25 g rice bran oil or olive oil
  • 70 g tomato paste
  • 50 g Vegetable stock paste (EDC)
  • 60 g white wine
  • 800 g Tinned Diced Tomatoes, (2 x 400g tins)
  • 150 g water
  • 300 g dried penne pasta

Recipe's preparation

    Chicken & Veg Pasta Bake
  1. 1. Place Parsley, Basil & Oregano in TM bowl, chop 3sec/Speed 7, set aside.

    2. Place carrot, zuchini, capsicum, Celery & pumpkin in TM bowl, chop 5sec/Speed 4, set aside.

    3. Place cheese in TM bowl, grate 8sec/Speed 8, set aside.

    4. Mince chicken chunks in 2 batches, Closed lid/Turbo/ 3 times. Set aside.

    5. Place onion, garlic & chilli in TM bowl, chop 3sec/Speed 7. Scrape down sides, add oil, saute 3min/100*/Speed 1.

    6. Add chicken to TM bowl, cook 5min/Varoma/Counter-clockwise operation/Gentle stir setting. Make sure chicken is not stuck to blades when finished.

    7. Add the following ingredients to the TM bowl, Parsley/Basil/Oregano, Carrot/zuchini/capsicum/celery/pumpkin, tomato paste, stock paste, wine, ONE tin of tomatoes & water. Cook 10min/100*/Counter-clockwise operation/Speed 1. Help stir the vegetables in through the opening with the spatula.

    8. Remove lid to check that veggies are stirred in properly. Cook 10min/100*/Counter-clockwise operation/Gentle stir setting.

    9. Use a 12 cup capacity ceramic oven dish, preheat oven to 180*. Place 1/3 of pasta in baking dish, top with 1/3 of the cooked mixture, then 1/3 of the grated cheese.( After this, add the second tin of tomatoes to the TM bowl & stir in by hand).

    Continue doing the layers of pasta, chicken sauce mixture and cheese.  

    10. Bake in oven for approx 50-60 min or until top is golden brown and pasta is tender.

    Very nice although I ran out of time so cooked the chicken and pasta separately (chicken cut up not minced). Then added cooked vegie sauce to chicken and poured over cooked pasta and sprinkled cheese over to serve.

    Wow! Thanks Melinda, thanks heaps for the comment and great rating. The pasta isn't meant to be pre cooked, that's why the sauce is pretty runny, i like to avoid extra work on these easy dishes, but I'm glad it still worked out. That means it should work nice with fresh pasta.... And you never know, I just may do that one day.. That's what our Thermi's are for...  Love

    So glad you liked it, once you get used to the recipe it will be a little bit quicker. It's also a really good one if you're taking a dish to a friends for dinner, plenty there.

    So good mincing you're own chicken breast, makes it very lean. You may want to try my chicken rissoles (patties), Hunter Lemon Chicken & Veg Rissoles. They turn out nice & im pleased to say it did win a competition once.

    A family pleaser with loads of hidden veges! This was absolutely delicious and made enough for the next night as well. I didn't use chilli, onion or capsicum but put in some extra zucchini. It's the first time I have ever minced chicken and it was so much nicer than store bought mince. It did take a while and at first I was regretting making on a night after work when we're all in a rush so next time I'll probably do it on a Sunday night so I can start a bit earlier. A family winner we will definitely be putting this one on rotation.

    Made this dish a couple of nights ago. I Don't have any Oregano in my garden so i uses some sage instead. I also only used one tin of tomatoes as my baking dish was to the brim. Also didn't layer it as i read it wrong so just mixed it all up and sprinkled the cheese on top.

    That being said this dish was amazing and will feature as a regular in our household  Big Smile

    Glad you enjoyed it, it seems a bit time consuming the first time but after that you'll see that some of the set aside ingredients can be put together. It's such a handy dish to make earlier and makes a huge amount so it's great for taking a dish to an outing. Thanks for the rating..  Cooking 10
