Pad Thai Chicken

Ingredients

4 portion(s)

  • 500 g chicken tenderloins
  • 1 package Pad Thai Rice Noodles
  • 1mc peanuts
  • 2 fresh red chillis
  • 1 clove garlic
  • 2 tablespoon lemon juice
  • 1 tablespoon tamarind paste
  • 2 tablespoon Rapadura Sugar
  • 1 tablespoon fish sauce
  • 2 tablespoon tomato sauce
  • 1 tablespoon Corn Flour
  • 1 tablespoon oyster sauce
  • 2 tablespoon olive oil
  • 2 Spring onions sliced

Recipe's preparation

  1. Place 900g water in TM Bowl

    Place Chicken in Varoma and cook varoma Temp, sp 4, 17-20mins

    Set aside and clean and dry TM bowl.

    Prepare noodles as per packet then place in thermoserver

    Chop peanuts on sp 5 for 5 secs, set aside

    Chop Chilli and garlic on sp 5 for 5 secs

    Add oil, lemon, tamarind, sugar and sauces with cornflour, mix sp 3 tmp 9- for 2 mins

    Add cooked chicken and hit turbo two/three times to shred

    Pour Chicken mix over noodles and toss.

    Add 1 MC of warm water to TM and turbo to remove excess sauce, pour over noodles.

    Sprinkle with chopped nuts and spring onions before serving

    I followed the recipe -  just added chopped up beans and coriander and it was great. Oh I did use chicken mince instead - very tasty. Winner in my family. Thanks for sharing the recipe.

    Little bit dissapointed. As others have said, I doubled the sauce, and still not enough sauce. Next time I wouldnt shred the chicken, and I will tweak the sauce too. First attempt at pad Thai. Did anyone else's stink? Tasted ok, but smelt quite bizarre.

    This recipe really isn't great.  The balance of flavours is really out.  I tried to correct it based off the comments but i just couldn't fix it.  Maybe no lemon juice at all? I really couldn't figure it out and made it worse. Sadly it ended up in the bin.  My first inedible meal in 10 years!

    Made this for dinner tonight. Used the recipe as a rough guide. Took people's comments into account and made extra sauce and played around with the quantities. Used less lemon juice and tomato sauce, only used one chilli, added more tamarind puree, fish sauce, oyster sauce and an extra clove of garlic. Oh I didn't have any rapadura so I used brown sugar instead. Also added some diced omelet (2 x large eggs whisked together with a few splashes of soy sauce), julienned carrot and bean sprouts. 

    Turned out nice. The family were happy. Lots of leftovers.

    Great recipe! I would double the sauce ingredients though.... And I added a head of broccoli and a zucchini to veg it up a bit more. I also modified it so that only one chilli went in and the other stayed whole to impart its flavour but also could be easily removed for my toddler to be able to eat it.

    Not like the authentic Pad Thai, but it was still the nicest one I have tried in the Thermomix. I only hit the turbo once and the chicken shredded perfectly. Will probably add bean shoots as well next time. Definitely will do it again

    I also made this with high expectations because of all the positive comments below, but I really was not impressed. The tomato sauce overpowered the dish far too much. It's definitely not how I remember Pad Thai to taste!

    Just divine! I always order this when out but no need anymore as it replicates authentic flavours beautifully. The sauce needs more cornflour though as its quite thin. We lick the bowls clean!

    Very nice, however I over-shredded the chicken and chopped the nuts too much (a lesson for beginners!).

    I added some vegetables and will add some coriander next time.

    Maybe some prawns on top as well...?

    Was fantastic.  I took on board the comments and doubled the sauce and that worked great.  I also steamed some vegetables I had along with the chicken then threw those in with the chicken at the shredding stage.  More hidden veggies for me! (Hidden from me, not from any children). tmrc_emoticons.)

    Our absolute favourite dish so far from the Thermomix. The flavours were to die for and it was all so right! I used chicken mince in lieu of tenderloins as that is what I had on hand to use up. It worked just as well. Thanks so much for sharing this recipe tmrc_emoticons.)

    What a beautiful, fresh dish! Me and my husband loved it! It doesn't taste exactly like traditional Pad Thai but it has got some awesome flavours! After I cooked the chicken I steamed some snow peas, capsicum and omelette on varoma for 6min and added that for extra colours and flavour. Also had to make the sauce twice as the amount in the recipe didnt make enough of it - and didn't add flour in second batch as it was way too thick with the flour.

    I ate out and had Pad Thai today and a cooked egg on top was lovely, maybe you towards the end of the chicken cooking you could line varoma tray with baking paper and cook an egg per person.  Also the peanuts ground up but served separately on the side to sprinkle over later was a delicious idea.  Your dish sounds great , I am going to try it with my changes and the bean shoots!

    Tastes exactly like the takeaway version, but far less oily! I agree with the above, it does need some more greens in it. Next time I will add some bean shoots. I also chopped the chicken on Turbo 3 times which was too much - the consistency of the chicken turned out like tinned tuna. It was still SO tasty but didn't look so great. My two young boys ate it so it's still going to be a favourite for our family!
