  • 1000 grams Apricots, cut in half or quarters
  • 700 grams raw sugar
  • 1 lemon

Recipe's preparation

    Jam
  1. Place apricots and 300g of the sugar in a bowl to stand for a few hours or overnight to produce juice.

  2. Place in thermomix bowl and add the remaining sugar and the juice of the lemon. Place one half of the juiced lemon in too.

  3. Cook Varoma/Speed 3 for 40-60 minutes with basket on top to allow evaporation and stop spattering on the bench. Test jam, remove lemon half and then jar. Makes approximately 3, 300ml jars.

  • Adding the half of juiced

    Adding the half of juiced lemon makes the Thermomix shudder and move.  Instead, I added finely grated zest of the whole lemon.
