Chicken Tortilla Soup

Soup

  • 2 fillets Skinless chicken breast fillets, sliced
  • 1 1/2 teaspoons olive oil
  • 1/2 medium onion
  • 4 cloves garlic
  • 1/2 teaspoon chili powder, more or less to your taste
  • 1 teaspoon dried oregano
  • 1 can 400g tin whole peeled tomatoes
  • 1 litre water
  • 2 tablespoon vegetable stock
  • 100 gram water, extra (1mc)
  • 1-2 tablespoon cornflour

Garnish

  • 1 --- cup cheddar cheese, grated
  • 1 tablespoon fresh coriander, chopped
  • 1 package plain tortilla chips (corn chips)
  • 3-6 pieces spring onions, finely sliced
  • sour cream, for garnish

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Prepare Chicken and Stock
  1. Put 1 Litre of water and 2 tablespoons of vegetable stock in bowl.

    Slice chicken breasts into apprx 4 strips.

    Place chicken slices in top section of Varoma, steam, 15mins / Varoma / speed 3.

    Once finished reserve liquid stock. Clean and dry bowl.
  2. Add steamed chicken to dry bowl, 10-15sec / Counter-clockwise operation / speed 4.

    Once finished reserve shredded chicken. Clean and dry bowl.
  3. Prepare soup base
  4. Add Onion and Garlic to dry bowl, 4sec / speed 6, to finely chop.

    Once finished scrape down sides of bowl.
  5. Add Olive Oil, saute onion/garlic mix for 3mins / Temp 120 / Speed 1.
  6. Add Chili Powder, Dried Oregano, Tin Tomato (and juice), chop for 6sec / speed 3.5, this should nicely chop the tomatos without them going orange. (Hint: Hold on tight! your Thermie might start "walking" around the bench here tmrc_emoticons.-) )
  7. Add reserved Stock mixture, cook for 10mins / Temp 100 / Counter-clockwise operation speed 1-2.
  8. Add Cornflour to extra water and mix until no lumps.

    Add to bowl, insert Butterfly, cook 3mins / Temp 90 / Counter-clockwise operation speed 1-2.
  9. Add Reserved Shredded Chicken and cook a final 5mins / Temp 70 / Counter-clockwise operation 1-2.
  10. Garnish and Serve
  11. Ladle soup into bowls, crumble a few Tortilla Chips, add grated cheese (to taste), dollop of sour cream, then garnish with Spring Onions and Chopped Coriander.

    Serve with extra Tortilla Chips in a bowl.

    This is one of my very favourite recipes. I have made it many times as I have a gastric band fitted and it's so tasty and slides down easily. Full of flavour, looks great, my family and guests love it too. Had to work out how to make more in one go. Thank you!

    Really Yummy! I put in a good grind of black pepper instead of chilli powder to make it toddler friendly. Added lots and lots of coriander on top. Even husband who doesn't like soup had seconds!

    YUMMY!!!!!!

    Simple as that.... just plain delicious tmrc_emoticons.-) I gave it a littel kick and my hubby liked it, although he generally doesn't like any spice. I won't give this batch to my toddler because of the spice, but I like that you can control it, so next bactch will be for my little one, I'm positive she will love it!!!! Thanks so much!
