Low Carb Clone of Mushroom soup

Ingredients

6 portion(s)

  • 1 --- small brown onion, peeled, halved
  • 2 cloves garlic
  • 1 Med carrots, roughly chopped
  • 2 pieces Celery, roughly chopped
  • 20 g olive oil
  • 200 g sliced mushrooms
  • 20 g Butter
  • 3 chicken wings
  • 1 tbsp porcini powder
  • 2 tbsp TM stock
  • 1000 g water
  • Salt & pepper to taste
  • cream or creme fraiche to top
  • fresh dill to garnish
  • 1 tsp Fresh or dried thyme
  • 1 tbsp fresh lemon juice

Recipe's preparation

  1. To make mirepoix:

    Chop garlic and onion 3 sec/ sp 5

    Add celery & carrots and chop 5 sec/ sp 5 add oil and sautee 3 min/ VAROMA/ sp 1 with MC removed

    Add mushrooms, porcini powder and butter and sautee a further 3 min/ 100C/ sp1 with MC removed

    Add TM stock, water, thyme and chicken wings to TM basket, and cook 25 min/ 100C/ sp 1.  Add lemon juice during the last minute

    Season with salt & pepper to taste and serve with a dollop of cream or creme fraiche and fresh dill

    You can also shred the chicken meat and add to the soup...

    This recipe is tasty and so easy to make, I had no mushroom powder so added some dried mushrooms to intensify the flavour and used half chicken stock to water for the liquid. We like our. Soup a little thicker so with half of it I just thickened it with a little arrowroot.

    i will definitely make it again
