Sweet Potato & Gingered Red Lentil Soup

Ingredients

2 litre(s)

Garnish

  • 2 tbsp olive oil
  • 1 onion, halved
  • 1 tsp fennel seeds
  • 1/2 tsp ground cumin
  • 1/4 tsp ground tumeric
  • 1 tsp sugar

Soup

  • 1 tbsp olive oil
  • 1 onion, halved
  • 2 cloves garlic, peeled
  • 1 tsp fennel seeds
  • 4cm fresh ginger, peeled & roughly chopped
  • 900 g water
  • 2-3 tbsp TM vegetable stock
  • 500 grams sweet potato, peeled & cubed
  • 150 grams red lentils
  • 300 grams Milk (full fat is better)
  • salt & pepper, to taste

Recipe's preparation

    Garnish
  1. Place all the Garnish ingredients except oil into the TM & chop for 5 seconds on Speed 7. Scrape down the sides of the bowl

  2. Add oil & Saute for 7 minutes on 100CSpeed 1

  3. Remove & set aside. 

  4. Soup
  5. Add onion, garlic, ginger & fennel seeds to the TM. Chop for 5 seconds on Speed 7. Scrape down the sides of the bowl. Add Olive oil & saute for 3 minutes at 100C on Speed 1.

  6. Add Water, Stock, Sweet Potato, Red Lentils, Salt & Pepper & cook for 15 minutes at 100C on Speed 1.

  7. Blend the soup by placing the cup in the lid & gradually increasing speed from speed 1 to Speed 9 for 20 Seconds

  8. Add the Milk & cook for a further 5 minutes at 100C on Speed 1

  9. Ladle the soup into bowls and sprinkle the spicy onion garnish over the top.

    nice custy loaf of Rye toast tops off this meal.

    Delicious!!!! You can really taste the fennel...really nice.

    Next time I would probably put more garlic in as i really like the taste in soup.

    I have just poured myself a second bowl of this lovely soup.  Instead of the milk, I used a 270ml can of Coconut Cream and a bit of extra water.  I was a bit concerned because the smell of the fennel was quite strong, but it turned out deliciously.  Thanks for a great recipe.

    I made this soup today...DELICIOUS! I substituted cummin seeds for fennel (I discovered I'd run out of the latter) and used some fresh turmeric. I also used a tin of evaporated milk. Yum! tmrc_emoticons.)
