Coconut Lemon Truffels
- 250g g Tennis Biscuits, South African Biscuits
- 197 g condensed milk
- 90 g Desiccated Coconut
- 80 g Butter
- 4 tbsp grated lemon zest
- 60 g lemon juice
- 1 tsp vanilla essence
- 1 portions dessicated coconut, For rolling balls

- All Biscuits to bowl and crush, 10 seconds, speed 7.
- Transfer into a ball and set aside.
- Add condensed milk and butter. Melt. 2 minutes, 120°C, speed 2.
- Add in all ingredients and biscuits. Mix 10 seconds on reverse.
- Scrape down sides. Mix 10 seconds on reverse.
- Transfer to a bowl and set in refridgerator to cool for 30 minutes.
- Roll into tbsp sized balls and roll in coconut.
Tip
These will keep in refregerator for a week or freeze for 3 months.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
