Ingredients

Coconut Lemon Truffels

  • 250g g Tennis Biscuits, South African Biscuits
  • 197 g condensed milk
  • 90 g Desiccated Coconut
  • 80 g Butter
  • 4 tbsp grated lemon zest
  • 60 g lemon juice
  • 1 tsp vanilla essence
  • 1 portions dessicated coconut, For rolling balls

Recipe's preparation

  1. All Biscuits to bowl and crush, 10 seconds, speed 7.
  2. Transfer into a ball and set aside.
  3. Add condensed milk and butter. Melt. 2 minutes, 120°C, speed 2.
  4. Add in all ingredients and biscuits. Mix 10 seconds on reverse.
  5. Scrape down sides. Mix 10 seconds on reverse.
  6. Transfer to a bowl and set in refridgerator to cool for 30 minutes.
  7. Roll into tbsp sized balls and roll in coconut.

Tip

These will keep in refregerator for a week or freeze for 3 months.
