Julsy’s Cinnamon Oysters

  • 2 eggs, Seperated
  • 57 g sugar
  • 57 g flour
  • 1 level tsp cinnamon
  • 1 level tbsp golden syrup
  • .5 level tsp baking soda
  • 1 level tbsp Milk
  • .5 level tsp ground ginger

Recipe's preparation

    Method
  1. Insert butterfly whisk
    Place egg whites into bowl and whip sp4 1min, scrape down sides and whip sp4 30seconds
    Add egg yolks and augar
    Whip sp4 5 minutes
    Add Golden Syrup
    Whip further 1 minute sp4
    Add flour, cinnamon, ginger and baking soda/milk mixture.
    Gently fold in dry ingredients.

    Grease a patty tin. Gently spoon mixture into pan. Makes 12 oysters
    Bake 180oC for 10 mins or until light to the touch.


    When cool, slice and fill with whipped cream. Dust with icing sugar and serve.

Tip

Known as 'funeral buns' from my childhood. My gran would make these for each funeral her church catered for.
Cinnamon oysters to many...always funeral buns for me.
