Lemon Loaf
- 110 grams Butter
- 1 lemon
- 125 grams sugar
- 227 grams self-raising flour
- 140g grams sour cream
- 2 eggs
- 1.5 teaspoons salt

- Preheat oven to 180°C. Lightly grease loaf pan (approx. 9 in. x 5 in.) and line the bottom with parchment. Using a vegetable peeler, thinly peel the zest from 1 lemon, avoiding the white pith, set aside. Cut lemon in half, squeeze the juice into a small bowl and set aside.
- Place sugar and reserved lemon peel into mixing bowl and grind 10 sec/speed 10. Scrape down sides of mixing bowl with spatula and grind a further 10 sec/speed 9.
- Add butter and mix 1 min/speed 3.5. Scrape down sides of mixing bowl with spatula
- Add flour, sour cream, eggs and salt and mix 15 sec/speed 4. Scrape down sides of mixing bowl with spatula.
- Add 1 oz reserved lemon juice and mix 15 sec/speed 5. Transfer batter to prepared pan and smooth top with spatula. Bake 55-60 minutes (180°C), rotating pan after 40 minutes. Let rest in pan for 10 minutes before transferring to a wire rack.
