Ingredients

  • 60 grams walnuts
  • 60 grams dates
  • 3 Bananas, ripe
  • 130 grams Butter
  • 100 grams sugar
  • 2 eggs
  • 60 grams wholemeal flour
  • 160 grams plain flour
  • 2 teaspoons baking powder
  • pinch sea salt
  • 1 teaspoon bi-card soda
  • 100 grams buttermilk
  • 2 teaspoons vanilla
  • 100 g Chocolate chips, optional

Topping

  • 1/4 cup, brown sugar
  • 1/4 cup, white sugar
  • 1 tablespoon cinnamon

Recipe's preparation

    Method
  1. Preheat oven to 180C. Prepare a medium-sized muffin tin. I use patty pans to make sure muffins don't stick
  2. Place walnuts and dates in TM bowl. Chop for 8-10 seconds, speed 7.
  3. Add bananas to TM bowl and mash for 5 seconds, speed 6.
  4. Add butter and sugar and beat 20 seconds, speed 4. Scrape down sides of bowl.
  5. Add eggs and mix 10 seconds, speed 4.
  6. Add all remaining ingredients and combine 20 seconds, speed 4.
  7. Spoon mixture into prepared patty pans. Bake for approx 20 minutes or until skewer comes out clean.
  8. Topping (optional)
  9. Top with cinnamon sugar before baking.



    To make cinnamon sugar, shake all ingredients together in a screw-topped jar. Sprinkle 1/2-1 teaspoon over each muffin before baking.

Tip

If you don't have buttermilk, you can make your own by adding 1 tablespoon of white vinegar or lemon juice to 1 cup of milk. Combine and allow to rest for five minutes before using in your recipe....from Everyday Cookbook.
