Ingredients

Mustard & Parsley Sauce

  • 10 g Flat Leaf Italian Parsley, (handful)
  • 50 g Butter, cubed
  • 25 g Flour, Plain
  • 420g g Milk, Full Cream
  • 2 tablespoon seeded mustard
  • salt & pepper, to taste

Corned Beef

  • 1200 g corned beef
  • 1.5 litres water, boiling
  • 5 cloves, whole
  • 3 bay leaves
  • 90 g apple cider vinegar
  • pepper, to taste

Vegetables

  • potatoes/sweet potatoes, peeled and cubed
  • carrots, peeled and chopped
  • Corn
  • broccoli florets

Recipe's preparation

    Mustard & Parsley Sauce
  1. Place the parsley into the TM bowl and chop for 5 sec / speed 7. Remove from bowl and set aside. There is no need to wash the bowl.

    Put the butter and flour into the TM bowl and chop for 4 sec / speed 5. Cook for 5 mins / Varoma / speed 2.

    Add the milk, seeded mustard, parsley, and salt & pepper to taste and cook for 8 mins / 100C / speed 3.

    Pour sauce into a microwave-safe jug and place glad wrap over the surface of the sauce to ensure that a skin does not form on top. Set the jug aside and clean the TM bowl. 

  2. Corned Beef
  3. Remove the beef from the packaging and place in the Varoma dish and rinse well under cold water. Dry beef with paper towels, lift it out and spray the dish with oil to make sure the meat does not stick. Place the beef back into the oiled Varoma dish. 

    Add the water, cloves, bay leaves, vinegar & pepper to the TM bowl and place the Varoma on top. 

    Cook for 1.5hrs / Varoma / speed 2.

  4. Vegetables
  5. After 1.5 hours add your potatoes, sweet potatoes and carrots to the varoma around the corned beef and in the basket if you are cooking for a crowd.

    Check the water level in the TM bowl and refill with boiling water to the 1 litre mark if required.

    Place the basket in the bowl and the Varoma back on top and cook for a further 30 mins / Varoma / speed 2.

    Add the corn and broccoli with 15 mins to go.

    Check the vegetables, if they are still firm cook for a further 5-10 minutes, taking care not to overcook the broccoli.

    Gently reheat Parsley Sauce and serve with corned beef and vegetables.

Tip

This sauce freezes well, just stir well after reheating.
