Alfredo Sauce
- 375 g pasta, dry, Shape of choice
- 25 g Butter
- 4 cloves garlic
- 300 g thickened cream
- parsley, large handful of leaves
- 40 g Parmesan cheese
- Pasta water, 1/4 cup pasta water

- Cook pasta according to packet directions and reserve 1/4 cup of pasta water before draining. Set aside reserved water and place pasta in a dish to keep warm while preparing the sauce.
- Mill parmesan and parsley for 10 seconds on speed 10. Set aside for later.
- Add garlic cloves to bowl and chop for 5 seconds on speed 7. Scrape down sides of bowl.
- Add butter and cook for 2 minutes 100 deg speed 1.
- Add cream. Heat for 5 minutes 90 deg speed 2.
- Add reserved pasta water and cook for a further 4 minutes 90 deg speed 2.
- Add parmesan cheese mixture, salt and pepper to taste and mix for 10 seconds speed 3
"Counter-clockwise operation" - Pour over reserved pasta and stir through sauce. Serve with extra parmesan and parsley if desired.
