Bacon, Cheese & Chive Egg Muffins

  • 100 g Mozzarella Cheese, small cubes
  • 100 g bacon, roughly chopped
  • 10 g fresh chives, finely chopped
  • 40 g Fresh Baby Spinach
  • 250 g cottage cheese
  • 400 g eggs
  • 1 tsp Onion powder
  • 1/4 tsp black pepper, freshly ground
  • 1/2 tsp salt

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Preheat oven to 160ºC fan forced. Grease a 12 cup muffin tray.
  2. 2. Add cheese to mixer bowl, chop 5 sec / speed 8 / MC on. Scrape mixer bowl down and stir mixture with spatula to ensure it isn't stuck to the bottom or the blades.
  3. 3. Add bacon to mixer bowl, chop 3 sec / speed 5 / MC on. Scrape mixer bowl down & stir mixture with spatula.
  4. 4. Add chives, baby spinach, cottage cheese, eggs, onion powder, pepper & salt to mixer bowl. Blend for 30 sec / speed 5 / MC on.
  5. 5. Divide mixture evenly in muffin tray & bake in oven for 30-40 minutes or until set. Let muffins sit for 10 minutes before serving.
