Ingredients

Breakfast Kolaches

  • 28 g dried instant yeast
  • 474 l Milk, Full cream milk
  • 115 g white sugar
  • 750 g flour, Bread or 00 flour
  • 456 g unsalted butter, Melted
  • 5 eggs
  • 12 g kosher salt
  • 1 portion sausage, Breakfast sausage (homemade & lightly cooked so hints of pink still)
  • 1 portions cheese, Monterey Jack or cheese of choice
  • 1 portions bacon, american style and lightly cooked so slightly crispy

Recipe's preparation

    Prepare the dough
  1. Warm milk Warm Up"Warm Up" 37 degrees
    Add yeast
    Stir Gentle stir setting"Gentle stir setting" 30 seconds
    Rest 5 minutes
    Add 250g flour
    Dough mode"Dough mode" 1 min 30 seconds
    Add sugar, salt, 4 eggs, butter and remaining flour
    Dough mode"Dough mode" 8 min 30 seconds
    Remove and place in lightly greased bowl
    Cover with plastic wrap and kitchen towel
    Rest until doubled in size (appox 1 hour)
  2. Roll and bake kolaches
  3. Prepare baking sheets with parchment (baking) paper
    Punch dough down
    On a lightly floured surface, divide into 4 equal sized balls
    Preheat overn (190c/375F - not fan forced)
    Pull a palm sized amount of dough into your hand and press flat, onto the lightly floured surface
    Work the dough so it's flat and round to place your chosen fillings in the centre. It should be roughly 12-13cm in diameter and 4-5ml thick. If you prefer you can also roll on a floured surface and cut into rounds with a cookie cutter, or a cup. If the dough feels too sticky to work with, you can sprinkle a little bit of flour to make it a little more workable but try not to overwork the dough too much.
    Place your preferred fillings in the centre, and pinch edges up to create a ball. Pinch the dough in the centre to bring the dough to stick together.
    Place seam side down on parchment paper.
    Lightly whisk an egg, and brush each kolache with egg wash
    Bake for 15 mins, or until golden brown.
    Allow to cool slightly on a rack before eating.

Tip

You can use any fillings you like, savoury or sweet. We like homemade breakfast sausage, streaky bacon, cheese, and scrambled egg.
