Cheesy Bacon, zucchini mini muffins

Ingredients

Mini Muffins

  • 200 grams tasty cheese, cubed
  • 1/2 --- brown onion, Cut in half
  • 200 grams bacon
  • 200 grams zucchini sliced, Approx 1 cm slices
  • 1 tablespoon EDC Stock Paste, (Found in every day cooking book)
  • 20 grams olive oil
  • 3 --- eggs
  • 250 grams Milk
  • 400 grams Self Raising Flour

Recipe's preparation

    Cheesy Bacon & Zucchini mini muffins
  1.  

    Chop 200gm tasty cheese into chunks and grate sp6 for 10 seconds. Set aside.

    Chop brown onion on sp4 for 5-6 seconds, scrap down sides of bowl.  Add in bacon & zucchini and chop 10 seconds sp4. Add 20gm olive oil and 1tsp EDC stock. Cook at varoma for 3 mins sp1

    Add milk & eggs, mix sp4 5 seconds. Add cheese & SR flour and mix sp5 for 10 seconds or until just combined.

    Spoon mixture into a mini muffin pan sprayed with non stick baking oil.

    Cook for 20 mins on 180'c or until golden.

Try adding grated zuchinni or 100gm parm cheese & 100gm tasty as a variety xx
