Bacon and corn mini quiches

  • 150 grams onion
  • 50 grams Corn
  • 120 grams grated cheese
  • 1 heaped teaspoon parsley
  • 2 eggs
  • Salt and pepper, To taste

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat fan forced oven 220C.

    Place parsley,corn, bacon and cheese and onion into TM bowl and grate for 6 - 8 seconds on speed 8. Scrape down sides and grate for an additional 2 - 3 seconds on speed 8 to ensure all ingredients are like a lumpy mess. Add eggs and mix for 35 seconds on Reverse  + speed 1. Use the spatula to assist in the incorporation of the ingredients. Roll out a sheet of puff pastry and cut into rounds to fit mini-quiche trays. Place a teaspoon of mixture into the pastry and cook in a pre heated oven for 12 minutes or until lightly browned.

    These were OK, I think the recipe needs too refined a bit.  I grated the cheese first and put side, there was a lot of onion (I would halve next time). I also only chopped once then added the corn in with the cheese and eggs. I used 2 sheets puff pastry and cooked for 17 minutes.
