Gluten Free, Dairy Free Carrot and Walnut Slice

Ingredients

  • 200 g Carrots, chunks
  • 40 g walnuts
  • 65 g macadamia oil
  • 2 eggs
  • 90 g Rapadura
  • 1 teaspoon ground allspice
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder, (Gluten Free)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 120 g Gluten Free Flour of your choice

Gluten Free Flour

  • 120 g sorghum flour
  • 160 g tapioca starch
  • 95 g Buckwheat grain or flour
  • 1 teaspoon xanthan gum

Recipe's preparation

    Slice method
  1. Place carrots and walnuts into mixing bowl.

    Mix 5 secs/speed 5

    Add all other ingredients and mix 15 - 20 secs, Counter-clockwise operation speed 4

    Transfer to lined slice tray and bake for approx 15 mins.

Tip

This recipe can be made as slice or muffins.

Walnuts can be substituted for nuts of your choice, dates or cranberries. Or left out all together if a nut free recipe is required.

 

To make GF Flour: Place all ingredients in mixing bowl and mill 1 min speed 9.

    Really yummy!! It's soft & fluffy, not many gf cakes are. I used coconut sugar & threw in a couple handfuls of sultanas with the carrots & walnuts & it came out perfectly. Thanks for a great quick recipe.

    This is the best slice - easy and tasty. Everyone likes it whether GF/DF or not. I have used 180C (15 min) and 175C (17 min) for this slice with great results in a 27cm x 17.5cm slice tin.

    Tried this for a quick evening treat, 15mins in the oven soon turned to a guessing game as it needs a lot longer... Maybe 25 + Minutes! Also - I may've missed reading but what is the temperature of oven meant to be at? Other than that... cup of tea and healthy Carrot Slice is an excellent match -very nice  Love
