Hidden Veg Pumpkin and Cheese Muffins

Easy Pumpkin and Cheese Muffins

  • 100 gram pumpkin, cut into 3cm chunks - no pips
  • 50 gram shallots, roughly chopped
  • 275 gram Milk, Whole
  • 150 gram Wholemeal Self Raising Flour
  • 75 gram olive oil
  • 150 gram Self Raising Flour, white
  • 2 tsp vegetable stock, Thermo BCB TM5 version
  • 1 level teaspoon baking powder
  • 150g gram Mozzerella or Tasty Cheese, Grated

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Very Easy Process:
  1. Preheat oven to 180C and prepare muffin tin with either oil or patty cases / silicon muffin cases.

    Add pumpkin and shallots to TM bowl and chop 4 seconds / Speed 8.  Scrape down bowl with spatula.

     

    Add all ingredients except cheese and mix 20 seconds / Speed 4.  Scrape down bowl again if needed.

     

    Add grated cheese and mix in Counter-clockwise operation / Speed 2 / 20 seconds.  Check cheese is mixed in and scrape down and mix slightly with spatula if needed.

     

    With aid of spatula, pour batter into muffin cases, filling them up to about the top of the patty case.

     

    You can sprinkle extra grated cheese over the top of the muffins before baking if needed (the pic has grated cheese on top).

    Bake in preheated oven for 25 mins at 180C.  Check muffins spring back.  If not, bake another few more minutes.

    The veg is quite hidden in these.  Feel free to chop the veg less if you want a chunkier muffin.

     

    They freeze perfectly for lunchboxes, or last a few days in the fridge in a sealed container.

    Thank you for  this recipe! My 10 month loves them! I doubled the recipe (but not the oil or cheese) and added spinach!

    When I got to the end of this recipe I thought I'd forgotten to add eggs... Does the oil take its place and could eggs be used instead of the oil?
