Lunchbox Chicken Bites

  • 40 grams Parmesan cheese, cubed

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Pre-heat fan forced oven to 200deg. Line two baking trays and set aside.
  1. Place parmesan into Closed lid mill 10 seconds/speed 9
  2. Place zucchini into Closed lid and grate 7 seconds/speed 4, until zucchini is evenly grated. Transfer to simmering basket and set aside to drain any excess liquid.
  3. Place garlic into Closed lid finely chop 5 secs/speed 9. Scrape down sides of mxing bowl with spatula.
  4. Place onion, bacon and oil into Closed lid and chop 3 secs/speed 5. Scrape down sides of mixing bowl with spatula, then saute 5 mins/120deg/speed 1.
  5. Add shredded chicken, grated zucchini, and parmesan to Closed lid Combine 6 seconds/Counter-clockwise operation/speed 4. Season to taste.
  6. Cut each sheet of pastry sheet into 9 equal squares. Brush two opposite sides of each square with beaten egg. Fold each square in half, pressing side together and leaving top open to make a boat shape.
  7. Place pastry boats on to lined baking trays. Spoon approximately 1 1/2 Tbsp chicken mixture into each boat.
  8. Bake in a hot oven for around 20 minutes or until pastry is browned. Serve with sauce of choice.
