Paleo Banana and Raspberry muffins
- 4 --- bananas, mashed
- 4 eggs, room temperature
- 2 tsp vanilla essence
- 64 g coconut oil, melted, at room temperature
- 200 g raw almonds
- 65 g tapioca flour
- 10 g Baking Powder, gluten free
- 20 g apple cider vinegar
- 5 g xanthum gum
- 5 g cinnamon
- 1 pinches sea salt
- 200 g frozen raspberries

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Add 200g almonds and blend "Blend" sp10 for 10 sec. Move into a separate bowl.
- Place 4 bananas into the mixing bowl and blend "Blend" on sp4 for 10sec
- Add eggs one at a time, on sp2 "Blend" until combined.
- Add 2 tsp vanilla essence.
- Add 64g of coconut oil. Combine on sp2 "Blend" for 15sec
- In a separate bowl, combine dry ingredients and whisk to remove lumps.
- Add dry ingredients to bowl. Mix on sp 4 "Counter-clockwise operation" for 20 sec
- Add 200g of frozen raspberries
- Mix on sp 3 "Counter-clockwise operation" for 20 sec
- Place muffin mixtures into prepared cupcake tins.
- Bake in the oven (180 degrees) for 35-40 minutes

Tip
Pre-heat the oven to 180 degrees celsius/ 356 degrees Fahrenheit.
