- 20 grams Butter
- 140 grams Self Raising Flour
- 1 egg
- 50 grams fresh spinach leaves
- 150 grams Milk or Buttermilk
- 10 grams curly leaf parsley

Place butter in mixing bowl and melt 30-40 secs./50c/speed 4.
Add all remaining ingredients and mix 20 secs/speed 5, or until smooth in consistency. Add ground black pepper to taste.
Place a spoonful of mixture into a hot non-stick frying pan. Cook until small bubbles appear on the surface, then flip and cook the other side until lighty golden. Transfer to a plate or cake rake to cool whilst repeating with the remaining batter.

My children loved these 'green' pikelets which I would often spread with thier favourite dip or spread.
They are flavoursome and fillling - perfect for a snack before the next round of daily activities!
