  • 60 gram Parmesan cheese
  • 130 gram cheddar cheese, cubed
  • 150 gram plain flour
  • 10 gram caster sugar
  • 100 gram softened butter
  • 1 pinch cayenne pepper
  • 1/4 tsp salt
  • 1 tsp balsamic vinegar
  • 10 gram ginger fresh
  • 5 Kaffir lime leaves

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Grate cheese and set aside until needed.  Parmesan and cheddar can be grated together or separately - your choice.

    Britz kaffir lime leaves and ginger, speed 10/5 secs.  Scrape down and blitz again if necessary.

    Add all other ingredients and mix on speed 5 for 8 - 10 seconds, until all is combined and forms a ball.

    Remove from TM Bowl, roll into ball, wrap in cling wrap and refrigerate for 15 minutes.

    Turn oven on to 180oC.

    Roll dough out between 2 sheets of baking paper, until about 6 mm thick.

    Cut into shapes. Continue to roll and cut until all dough is used.

    Place on baking tray lined with baking paper - leave a small gap between each shortbread.

    Cook in oven about 10 - 15 minutes until golden brown.

    Remove and cool on wire rack .

Can vary the flavour by omitting the kaffir lime leaves and ginger and substituting other flavour combinations such as:  grated lemon zest and black pepper; garlic and rosemary; lemongrass and ginger.

The number of portions made will depend on the thickness of the shortbread and the size of the cutter used.
