Spinach and Chorizo Savoury Muffins
- 1 Continental chorizo
- 80 g zucchini
- 60 g Baby Spinach Leaves
- 80 g shredded cheese
- 2 eggs
- 310 g GF SR Flour
- 1 tsp GF baking powder
- 240 g Milk
- 40 g olive oil
- 1 salt and pepper to taste

Recipe's preparation
- 1. Pre-heat oven to 180 degrees C.
2. If using a block of cheese, add 80g, shred on speed 5 for 5 seconds, set aside (if using pre-shredded cheese, add with remaining ingredients in step
3. Slice continental chorizo lengthways and then into small chunks and add to bowl.
4. Blend speed 6 for 20 seconds MC on, or longer if needed until ground.
5. Sautee on Varoma, MC off for 2 minutes, speed 2.
6. Set aside.
7. Add zucchini (chopped into TM friendly chunks) and baby spinach, chop on speed 5-6 for 6-10 seconds (5 for chunky veg, 6 for fine).
8. Add chorizo and all remaining ingredients and combine on speed 4 for 20-30 seconds.
9. Divide mixture evenly across a 12 portion greased muffin tin.
10. Bake in oven, 180 degrees for 22-25 minutes.
Enjoy for breakfast! They are delicious!

Tip
Top with capsicum or finely chopped chorizo before baking for extra fancy.
Can be baked non GF by using normal flour/baking powder.
Vegetarian option - omit chorizo, add feta or haloumi cheese (do not sautee).
