680 g

BREAD DOUGH

  • 270 grams room temp water
  • 1 tsp sugar (heaped)
  • 1.5 teaspoons dried instant yeast
  • 450 grams white bakers flour
  • 1.5 teaspoons salt
  • 1.5 teaspoons Bread Improver (Optional)
  • 15 grams oil

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. To your Thermomix bowl - add water, sugar, yeast, flour, salt, bread improver & oil. Knead 6 minutes/dough function.
  2. Transfer dough to a lightly floured or oiled Thermomat & cover. Let this rest for 15 minutes.
  3. Shape dough & place into a Sandwich Sized Bread Tin.
  4. Cover, then place in a warm location & allow the dough to grow to the top of the tin - time will vary depending on temperature - this could potentially take a couple hours.
  5. Preheat oven to 180• fan forced, then bake until golden brown - approx 30/35 minutes. Immediately remove loaf & transfer to a cooling rack.
  6. For best results, slice once cooled, then freeze what you don't intend to eat the same day - it defrosts perfectly!

Tip

Dough loves a humid environment to proof/grow! I have great results spraying lightly with water, then placing in a warm location. You don't want the dough to dry out.

    I don't know what happened... followed the recipe, load doubled in size for the proof on the tin, in the oven, checked ages 30mins & it was still very raw, went in for another 20mins, at this point it was cooked but halved in height from it's original proof, it was as high as a focaccia 🤷🏽‍♀️

    Help what happened, I made the dough exactly as the recipe, i then let the dough rise in a warm spot , in the microwave, it took 2 hours to rise to the top, looked great, then i took it out to put in the oven and it completely deflated, what have i done wrong?

    FOR RAISIN TOAST.........This bread is fantastic! I used this same recipe, but used the spices, and raisins, from the "hot cross bun recipe," to make raisin toast. It tastes, just like the Tip Top loaf from the shops.

    I love this recipe, I have made this a few times the last few weeks. I purchased the pans last year in TheMix 50% sale and it took me nearly 6 months to be brave and try baking bread. My go to recipe for bread!

    Have just made this but in a 9x5 loaf tin. It came out a very high loaf but is delicious. So if you don't have the thermomix pan don't be deterred.

    For those asking about lids... Using a lid is personal preference & creates a square loaf If you intend to use a lid be sure to slide the lid on handle first. And get it in the oven when the dough is a couple centimetres away from the lid (it will grow ever so slightly in the oven).

    KatFishStew: From what I can see, it's not really a 15 minute proof, just a little rest. This dough only proofs once in the bread tin before it's baked. I'm going to give this a go, as I normally proof my bread twice, but this method would save so much time.
