Zucchini and red onion muffins - gluten and dairy free

Ingredients

12 portion(s)

  • 200 grams plain flour, Gluten free
  • 10 g baking powder (GF)
  • 10 g sugar
  • 1 pinch salt
  • 1 --- zucchini, Roughly chopped
  • 1 --- small red onion, Or half a large one
  • 1 sprig spring onion
  • 1 tablespoon Mixed Herbs, Fresh or dried
  • 100 g Dairy free butter, Nuttelex or similar
  • 100 g dairy free milk, I used rice milk
  • 2 --- eggs
  • 30 g Dijon mustard

Recipe's preparation

  1. Preheat oven 180 degrees and grease 12 tin muffin tray

  2. Add flour, baking powder, sugar and salt to jug and mix 5 seconds speed 5. Set aside in a large bowl. NO need to clean thermomix jug between any of the steps!

  3. Add zucchini, red onion, spring onion and herbs and mix 2 seconds speed 6. Pour into bowl with flour etc.

  4. Add butter to jug and melt 60 degrees 1 minute speed 3. 

  5. Add milk, eggs and mustard into jug also and mix 5 seconds speed 5. 

  6. Add bowl with flour and zucchini mixture back into jug and mix 20 seconds speed 4 reverse.

  7. Spoon into muffin tray and cook for 25-30 minutes until lightly golden. Enjoy!
