Zucchini slice

  • 150 grams cheese
  • 1 onion
  • 200 grams Rindless Bacon
  • 1 carrot
  • 375 grams zucchini
  • 55 grams vegetable oil
  • 5 eggs
  • 150 grams self-raising flour

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Method
  1. 1. Pre-heat oven 170 degrees - grease/line a 30 x 20 cm Lamington pan

    2. Grate 150 grams cheese (approx 1 cup) grated - 17 seconds - speed 5 - put in separate bowl

    3. 1 large onion - finely chop - 4 seconds - speed 5 - put in bowl with cheese

    4. 200 grams - rindless bacon - chopped - 5 seconds - speed 5 - put in bowl with other ingredients.

    5. 1 carrot - finely chopped - 3 seconds - speed 5 - put in bowl with other ingredients.

    6. 375 grams zucchini (approx 3) - grated - 5 seconds - speed 4

    7. Add all ingredients in bowl to Thermomix, plus 55 grams vegetable oil, 5 eggs, 150 grams self raising flour

    8. Mix well 20 seconds Counter-clockwise operation speed 5 

    9. Pour into prepared pan and bake in oven for 30 minutes or until cooked through.

Tip

If you find the Zucchini a little watery be sure to squeeze it out.

Is also nice if you sprinkle with pine nuts before baking also served with a relish/chutney.

    This is such a simple, versitile and healthy recipe. Ready in no time and ideal for any meal served with a salad or simply on its own. It is also an ideal healthier snack rather than some of the other options sitting in my fridge. Since owning my thermie, this is the recipe I have made the most.

    Awesome adaptable recipe thanks! I used less oil and GF flour with an extra 50g polenta flour. Added 7 eggs and 1 tsp vege stock paste and only 100g tasty cheese & a bit of parmesan. Used 2 carrots, half a large sweet potato and 2 zucchini (It came out a little sweet). It was a hit with my family and made it in my middle size bessemer dish, lightly oiled. Notes for my future use thanks.

    I find draining the water from each vegetable after its blended (I just place it in paper towl & squeeze the water out) really helps the slice consistency and allows it to bake better, therefore its not as runny. I bake my slice for 35- 40minutes depending on the depth of my tin.

    Brilliant slice, my whole family loves it. Thankyou !!

    Delicious and easy! Reduced bacon to 100g and used red capsicum in place of some of the zucchini, turned out great taste and texture! Cut into 8 slices for the freezer as ready-to-go lunches.

    Surprisingly amazing!

    Once I prepared everything - exactly as per the recipe - I realised there were no herbs or even salt/pepper.

    So, I had my doubts.... It took about 40 mins longer than the orginal recipe said but it was excellent! Will definitely try the recipe again, with a little twerks...

    I used coconut oil instead of vegetable oil and it didn't hold together. It was zucchini goop, not slice. Still delicious though. Does anyone know shy? TIA
