30 Second Cupcakes

Ingredients

24 portion(s)

Cupcakes

  • 250g unsalted butter, cubed
  • 200g caster sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 250g self-raising flour
  • 100ml Milk
  • 2 tablespoons cocoa, OPTIONAL for chocolate cupcakes

Recipe's preparation

    Cupcakes
  1. 1. Preheat oven to 170°C.

     

    2. Line a cupcake or muffin tray with cupcake/muffin papers.

     

    3. Place all ingredients into the TM bowl and blitz on speed 6 for 30 seconds.

     

    4. Spoon mix into prepared cupcake tray, 2/3 filling each paper case (the cupcakes will rise).

     

    5. Place in oven and bake for 10-12 minutes for small cupcakes or 15-18 minutes for muffin-size cupcakes.

     

    6. Allow to cool for 5 minutes before removing from tray.

Tip

When cooled, ice with a vanilla, chocolate or fruit flavoured buttercream, which can be smoothed on with a flat knife or piped for a decorative effect.

Top with sprinkles and cachous.

    So good!!! Delicious, and so quick. I used normal butter, as I had no unsalted butter. I also added mini m & ms to the mix. Will be making regularly for sure!!

    These were delicious, I overfilled the mini cases so they were a little lopsided but the 30 preschool kids didn't care, nor did the big kid that stole a few the night before. I got about 50 minis out of one batch. I usually find cupcakes the most disappointing of all cakes but these were light and fluffy. I reduced the sugar by about 50gms as I planned to ice them. This will be my go to recipe from now on

    i love a mix it all together recipe. Cooked beautifully and were light and fluffy. Next time will replace some of the flour with cocoa to make a chocolate version

    Simple, quick, no need to soften butter etc. Finished mixing just as I put all the ingredients back in the pantry. Have made half a dozen times with consistent results. Batter very easy to handle, makes nice light cupcakes.

    My daughter doesn't eat cake but she loved these. I don't know if it was because of the recipe or because I made them into rainbow cupcakes to share with her kindy friends for her birthday,but she ate them. She did say that all cakes should be rainbow cakes.

    Just what it says!
    I find it's always a nice surprise when a recipe tagged as 'easy' or 'quick' actually turns out to be that way. This recipe is great; quick, easy, tasty, suitable for freezing, and adaptable to any flavour. I've made the plain vanilla, chocolate (using raw cacao powder), strawberry (using pureed fresh strawberries), and mango (using pureed frozen mango). They all worked beautifully.
    I used a mini cupcake mould that made 54 out of one batch.

    Great recipe! I've made 2 batches so far. THe 2nd batch I made in my stand mixer using the traditional creaming method just to see what the difference would be. Result - huge time saver in the thermomix and no real difference in fluffiness and texture. I'll be using the thermomix from now on :-). I had a problem with exploding cup cakes with both batches, like little mini vulcanoes. The TM batch had very tall peaks which I just trimmed flat so they would look better when iced. I probably overfilled them or maybe my oven is a bit hot? I have a heap of leftover Swizz Caramel Buttercream whihc I had frozen that I used to ice them and got rave reviews from both batches.

    So yummy & fluffy. I made them gluten free, dairy free using GF Flour, nuttelex and macadamia milk as well as using a reduced amount of coconut sugar. This gave a coconut/vanilla flavour. I may reduce sugar next time to half. I iced with sugar free pink icing on recipe community and they were a hit! I made half the recipe and got 11 standard cupcakes but will def make whole batch next time. Thank-you!

    As others have said these cupcakes are super fluffy and ridiculously quick to make. I didn't realise the milk quantity was in mls so added 100g (perhaps this is correct?) and they were perfect.
