Almond, chocolate and Date Torte

  • 170 grams almonds
  • 170 grams Pitted Dried Dates
  • 170 grams dark chocolate
  • 4 eggs
  • 110 grams Rapadura suagr
  • 300 grams thickened cream
  • 10 grams Castor Sugar or Rapadure Sugar
  • 100 grams Chocolate grated to sprinkle on top

Recipe's preparation

  1.  


    Base


    Grind down Rapadura for 10 seconds, speed 10 and put aside by its self.


     


    Weigh in Almonds and grind 6 seconds, speed 6. Put aside.


     


    Weigh in broken up pieces of chocolate, 10 seconds, speed 8 and add it to almonds.


     


    Add pitted dates and chop for 10 – 15 seconds, 7 speed, they should be a little chunky.


     


    Add Almond and chocolate mixture back to your Thermomix and mix for 25 seconds, reverse, speed 4. Put aside and clean & dry bowl.


     


    Add egg whites and mix for 3 ½ minutes, speed 3.5 with the butterfly inserted into position.


     


    When egg whites appear fluffy, slowly add the Rapadura sugar to the mixture whilst the Thermomix is still mixing. Once all the sugar has been added mix for a further 20 seconds, speed 3.5 still with butterfly in place. The egg whites should be all thick and glossy.


     


    Add the egg whites to the bowl that contains the Almond, Chocolate and Dates. Gently fold in the mixture with a metal spoon and transfer mixture into a lined cake tin and spread evenly.


     


     


     


    Bake torte on 180 degrees for 40 45 minutes or until the outside is browned, crisp and dry. The inside of the torte will still be moist.


     


    Store in an air tight container once it has completely cooled. (This can be done a day ahead)


     


    Topping


     



     



     



    A few hours before serving the Torte, place cream and sugar in Thermomix and mix with butterfly in place 20 – 40 seconds, speed 3.5.



     



     



     



    Spread cream evenly over the top of the base and sprinkle with grated chocolate. Store in an airtight container in the fridge until ready to serve.

    This is nice and full of nice ingredients. Mine did not come out as dark as your pic but might not have chopped my chocolate buttons up enough. Served with cream and chocolate (well half of it was as the family got to it before it was iced) thanks!

    I have made this several times as a grown up birthday cake and it has been very well received. My mum was really pleased to find this receipe as it was a TM version of a recipe she used to make years ago and had lost her copy of.
